Recipe's preparation

    Base
  1. Line an 18 x22 cm shallow baking tray with baking parchment. Preheat oven to 190c
  2. Weigh the butter, flour and milk into the bowl and cook 6 mins/90/speed 4
  3. Add the watercress and blend 30 seconds Add the yolks and 1/2 teaspoon salt and pepper . blend 20 seconds /speed 4 . Transfer to a mixing bowl.
  4. Clean and dry the bowl carefully insert the butterfly whisk. Whisk the egg whites 3 minutes/ speed 3 to soft peaks. Carefully fold the whites into the watercress mixture. Pour into the prepared baking sheet and bake 12 minutes 190c until lightly browned.

    Lift the roulade on its paper onto a rack to cool.

  6. Chop the spring onion, salmon and cream cheese 10 sec/ sp 5.
  7. Scrape down the sides of the bowl with a spatula add the lemon juice and black pepper . Mix 15 sec/ sp 5
  8. Turn the cooled roulade out onto another sheet of parchment paper. Carefully peel off the paper from the roulade and spread the top with an even layer of salmon pate .

    Using the paper as support roll up from the long side . Seal the paper ends or wrap in cling film and chill for an hour to firm up before serving
  9. Garnish with watercress and lemon to serve

Tip

Cut the roulade in half before rolling to make smaller roulades for canapés
