Tomato soup

  • 2 --- white onion, cut in half
  • 2 stalk celery, cut in 2-3 pieces
  • 3 --- garlic clove, peeled
  • 1 tsp chilli paste, or to taste
  • 1 tbsp vegetable stock paste, homemade
  • 2 --- red peppers
  • 4 --- beef tomatoes
  • 1 tbsp extra virgin olive oil

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Place the onions, celery and garlic cloves in the bowl.
    Chop 5 sec/speed 5.
    Add olive oil.
    Saute 5 min/105C/speed 1.
  2. Add the chilli paste if using (see my recipe for homemade chilli paste), vegetable stock paste (Thermomix's recipe), red peppers and beef tomatoes.
    Chop 5 sec/speed 5.
    Saute 5 min/105C/speed 1.
  3. Add water to the top mark.
    Simmer for about 18 min/98C/speed 1.
    Blend 5 to 30 sec/speed 6 depending on the texture that you like, the longer you blend it, the smoother the soup.

Tip

- I tend to leave the measuring cup on as it does it splash and can otherwise paint my kitchen !
- if you can't find beef tomatoes, just use tomatoes on the vine. Since they're last in the bowl, I tend to put in as many as I can.
- you can replace the red peppers with those long sweet pointy peppers, or do a mix of both !
- for extra creaminess without the cream, you can add a handful of white rice at step 2 (tip from Jamie Oliver)
- this soup freezes beautifully. I ladle it into muffins tins, leave them to set in the freezer then pop them in a zip bag. I find 2 or 3 muffin-size pieces equal 1 portion.
