Veggie Bolognese Sauce

Bolognese Sauce

  • 150 grams onion, quartered
  • 1 tablespoon olive oil
  • 3 cloves garlic
  • 100 grams celery, cut into chunks
  • 150 grams carrots, sliced (1cm thick)
  • 1.5 peppers, cut into 2cm pieces
  • 200 grams mushrooms, quartered
  • 1 red chilli, chopped finely
  • 400 grams cherry tomatoes, halved (or 400g chopped tomatoes)
  • 1 stock cube (for 0.5 l)
  • 1 teaspoons dried oregano
  • 0.3 litres water
  • 300 grams Quorn mince, or equivalent substitute
  • 2 teaspoons balsamic vinegar
  • 2 teaspoons capers
  • 3 teaspoons tomato puree
  • 1 teaspoons sea salt
  • 1 pinches black pepper, freshly ground, add more to taste

Recipe's preparation

    Sauté the onions & garlic
  1. Place onions, oil, garlic & celery in mixing bowl then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula and sauté 10 min/100°C/speed 1.
  2. Add carrots, peppers, mushrooms and chilli and cook 15 min/100°C/Counter-clockwise operation/speed Gentle stir setting.
  3. Add cherry tomatoes, stock powder, oregano, water, Quorn mince, balsamic vinegar, capers, tomato purée, salt & pepper and cook 8 min/100°C//speed .
  4. Serve with your favourite pasta.
