Ingredients

Korma

  • 1 tablespoon mustard seeds
  • 2 tablespoon rice bran oil
  • 1 large onion, peeled & halved
  • 2 cloves garlic, peeled
  • 2 centimetre root ginger, peeled
  • 1 teaspoon ground tumeric
  • 1 teaspoon ground cumin
  • 1 tablespoon TM Vege Stock Paste
  • 600g crushed tomatoes
  • 400g can chickpeas (rinsed and drained)
  • 1 sweet potato - 2cm cubed
  • 200mls coconut cream
  • 1 tablespoon Brown sugar
  • 150g baby spinach, fresh
  • Salt & pepper to taste
  • fresh coriander to garnish, (optional)
  • fresh chilli, to garnish, (optional)
  • 350g Pumpkin 2cm cubed
  • 2 tablespoons cashew pieces
  • 1 tablespoon Shredded coconut

Cooked Quinoa or Rice to serve

Recipe's preparation

  1. Place mustard seeds & oil in TM bowl and heat  Speed 1/Varoma/2mins.

    Add onion, garlic, ginger chop 5secs/speed 6, scrape down bowl.

    Cook 2mins/100 degrees/speed 2.

    Add spices and cook 1min/100 degrees/speed 2.

    Insert butterfly, add crushed tomatoes & cubed sweet potato and pumpkin and brown sugar, cook 10mins/100 degrees/speed 1Counter-clockwise operation. Put steamer basket on lid to avoid splashing.

    Add remaining ingedients and cook another 5 mins/100 degrees/speed 2Counter-clockwise operation.

    Add seasoning with salt & pepper if desired.

    To serve place cooked quinoa in bowl top with baby spinach & ladle over Sweet Potato Korma. 

    Garnish with freshly chopped chilli & coriander if desired. Serve with triangles of wraps pan-fried

Tip

Can be served with rice, quinoa or any grain, or pureed into a soup. Try changing the vegetables to what you have available.  Add chilli with the spices for more heat.
