Stuff Chicken Breasts with Tomato Sauce

Chicken

  • 60 g courgettes, cut in pieces (3 cm)
  • 60 g red peppers, cut in pieces
  • 100 g cream cheese
  • 1/4 tsp dried basil
  • 1 tsp fine sea salt, plus 1 pinch
  • 2 pinches ground black pepper
  • 4 chicken breasts, large
  • 600 g water

Tomato Sauce

  • 1 clove garlic
  • 100 g onions, quartered
  • 10 g olive oil
  • 400 g tinned chopped tomatoes
  • 2 pinches Ground cayenne pepper
  • 1 pinch sugar
  • 1/2 tsp dried basil
  • 1/2 tsp ground black pepper
  • 1/2 tsp fine sea salt
  • 5 g fresh basil leaves, for garnish

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

    Chicken
  1. Place courgettes and red peppersin mixing bowl then chop 6 sec/speed 4.
  2. Add cream cheese, dried basil, salt and 1pinch pepper then mix 5 sec/speed 3. Transfer to a bowl and set aside.
  3. Cut a pocket into each chicken breast. Fill each pocket with 1heaped Tbsp cream cheese mixture. Season chicken with remaining 1 pinch salt and remaining 1 pinch pepper. Seal pockets with toothpicks if necessary then place in Varoma dish.
  4. Place water in mixing bowl and place covered Varoma into position then steam 25-30 min/Varoma/speed 1 until chicken is cooked through. Set Varoma aside and empty mixing bowl.
  5. Sauce
  6. Place garlic in mixing bowl and chop 5 sec/speed 7.
  7. Add onions and oil then chop 5 sec/speed 5. Scrape down sides of mixing bowl with spatula then sauté 2 min/100°C/speed Gentle stir setting.
  8. Add tinned tomatoes, cayenne pepper, sugar, dried basil, black pepper and salt then cook 4 min/100°C/speed Gentle stir setting.
  9. Serve stuffed chicken with the tomato sauce and a garnish of fresh basil leaves.

Tip

For a complete meal, place 400 g sliced potatoes in simmering basket and steam while chicken is cooking in Varoma.
