Chicken curry

- 3 --- carrot
- 1 --- potatoes, waxy
- 3 --- chicken breast, (can be frozen)
- 1 cans Coconut milk
- 3 heaped teaspoons curry powder
- 1 heaped teaspoons ground turmeric
- 1 pinches cumin, ground
- 1 pinches coriander, ground
- 1 scoops frozen peas
- 1 scoops sweetcorn kernels, frozen
- 1 pieces vegetable stock paste

Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

1. Add the onions and garlic cloves to
. Chop 5 seconds / speed 5. Scrape the sides of the bowl
2. Add about 1 tablespoon of rapeseed or olive oil and cook 5 minutes / 105C / speed 1.
3. Add the carrots. Chop 5 seconds / speed 4. Scrape the sides of the bowl.
4. Add the cubes potato, chicken (whole or cubed, can be cut into pieces later), coconut milk and 1/2 can of boiling water, vegetable stock, spices.
Cook for 32 minutes / 98C / speed 1.
5. Add the frozen peas and sweetcorn. Cook for a further 8 minutes / 98C / speed 1.
6. Chop the chicken breast if desired into pieces and return to the sauce. Sprinkle with fresh or dried parsley if you have any.

Tip
You can serve with lemon rice or coconut rice.
You can sub the parsley for coriander - depends on what you have handy.
You can replace the chicken with more vegatables (sweet potatoes, butternut squash or summery squash) to make it vegetarian.
