Nadia's Creamy Garlic Prawn Risotto

Creamy Garlic Prawn Risotto

  • 50 g Parmeasan roughly chopped
  • 6 garlic cloves
  • 1 Handful fresh parsley
  • 40 g olive oil
  • 375 g arborio rice
  • 100 g dry white wine
  • 300 g Peeled and Tailed Green Prawns
  • 2 Zuchinnis, Made into Zoodles - I use my Spirooli
  • 45 g Vege Stock Concentrate
  • 950 g water
  • 100 g pure cream
  • qtr lemon - juice only
  • salt and pepper
  • 2 shallots/spring onions, chopped for garnish

Recipe's preparation

  1. Add Parmesan and grate for 5 seconds on speed 7. Set aside


    Add Garlic and Parsley to the TM Bowl and chop for 5 seconds | Speed 6. Scrape down the sides of the bowl.


    Add the Oil and saute for 3 Minutes | 100 Degrees | Speed 1 


    Insert butterfly. Add rice and wine and saute for 2 minutes | 100 degrees | Counter-clockwise operation | speed 1


    Add stock and water and cook for 14 minutes | 100 degrees | Counter-clockwise operation | speed 1. Leave the MC OFF



    Add prawns, cream, lemon juice and zoodles and cook for 1 minute 30 seconds | 100 degrees | Counter-clockwise operation | Speed 1


    Place in thermoserver and let stand for approx 10 minutes.


    Season with salt and pepper and serve with parmeasan and shallots.


Accessories you need



Leave the MC off until the prawns are added. This helps create a perfect consistency

** The prawns are easily overcooked in the thermomix. The cook time of 1 min 30 is perfect in the Thermomix, as they will cook through resting in the thermoserver


** Can replace Zuchinni noodles with roughly chopped mushrooms, frozen peas or even baby spinach leaves
