- Measure 240g Water
Measure 120g Milk
add 7g Dried Yeast or 15g Fresh Yeast
add the Sugar
Set temperature to 45˚C
Mix ingredients on speed 1 for 5 minutes
Then add all the other ingredients (flour, baking powder, oil and salt) and kneed for 5 minutes.
Remove from bowl and form a ball, sit in a large bowl covered in a teatowel for 1.5 - 2 hours or until doubled in size.
Roll the dough to 1/4 inch thick and cut out discs of about 3 - 4 inches. Brush one side of disc with oil and then fold the disc in half, roll very slightly with rolling pin just to stop them coming apart, set into Varoma steamer or bamboo steamer about 1 inch apart, sitting on steaming sheets or grease proof paper and then steam for 8-10 minutes
Try putting a teatowel under the lid of the steamer to stop water droplets falling onto the top of the buns. Also try using greaseproof paper to stop them sticking to the bottom of the steamer
