Vegan Banana Pancakes

  • 0.24l litre non dairy milk, (240ml)
  • 2 level tablespoons oil
  • 1 --- banana, medium sized
  • 200 g plain flour
  • 2 level tablespoons sugar
  • 1 level tablespoons baking powder
  • 1/4 level teaspoons baking soda
  • 1/2 level teaspoons salt
  • 1 level teaspoons ground cinnamon
  • 1/4 level teaspoons ground nutmeg

Recipe's preparation

    Preparing you Pan Cake Mixture
  1. Blend the ingredients until smooth. Dont over blend. Stop as soon as everything is smooth and combined. It should take less than a minute.
  2. Leave the batter to rest for at least 10 minutes. It will be thick. Dont be tempted to thin it! While it rests, pre heat your griddle/pan to medium (325F or 162C)
  3. Lightly grease the pan with a brush, then pour the batter in rounds, 1 at a time, about 1 ladle full per pan cake. Leave to cook until bubbles appear all over the top and to pop, then flip the pancake over in the pan.
  4. Allow to cook for another 2 to 3 mins until golden brown then remove from the pan and serve.
