Sweet Light Scones

  • 500 g Flour italian 00, Or plain flour
  • 2 tsp cream of tartar
  • 1 tsp bicarbonate of soda
  • 1 tsp salt, fine, Less if using salted butter
  • 125 g butter, unsalted
  • 25 g caster sugar
  • 1 egg
  • 80 g natural yoghurt
  • 150 g skimmed milk, Or any type of milk

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. Preheat your oven to 220C
    add flour, cream of tartar, bicarbonate of soda and salt to Closed lid, mix 20 secs, speed 10
    Cube butter (Should be cold not soft) , add butter and sugar to Closed lid, mix 5 secs, speed 6
    Beat the egg in a bowl, add 2/3 to yoghurt and milk, and beat lightly add this mixture to Closed lid and mix 20 secs, using Dough mode
    Tip mixture onto a floured surface, bring together to form a ball. Flatten out dough to about 2cm, using a 5 cm cutter, cut and place scones onto a baking sheet.

    Leave to cool on a wire rack.
    Best eaten same day with butter and jam, or with clotted or thick cream
    Any uneaten scones on the day of baking best to freeze them and defrost as many as required later.
