Healthier hobnob style cookies

  • 50 g wholemeal flour
  • 200 g plain flour
  • 55 g date, pitted
  • 120 g coconut oil
  • 1 --- egg
  • 1 level tsp baking powder
  • 1 level tsp vanilla extract, natural
  • 100 g Dried Fruit, (raisins, cranberries, mixed peel, currant) and cacao nibs
  • 100 g jumbo oats
  • 1 pinches salt, fine

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Pre-heat oven to 180C

    1. Add plain and wholemeal flour, dates, salt, cinnamon, coconut oil, egg, baking powder and vanilla to Closed lid
    2. mix for 20 seconds / speed 5
    3. add dried fruits and oats
    4. mix for 10 seconds / Counter-clockwise operation speed 4
    5. form small/medium/large balls and lightly flatten
    6. bake for 12-15 minutes

Tip

You can use an ice cream scoop to make even-sizes cookies.

Note : they're the ones on the left-hand side of the photo, the cookies on the right-hand side are milk chocolate chip cookies (recipe from the French Thermomix platform).
