- 1 tsp bicarbonate of soda
- 1/2 tsp Himalayan salt
- 1 blueberries, 1 Cup
- 6 eggs
- Maple syrup, 1/2 Cup + 2 Tbsps
- 1 Cup coconut flour
- 1 Cup Coconut milk
- 4 tablespoon coconut oil, Melted
- 4 tbsp chia seeds
- 4 tsp vanilla extract

Preheat the oven (180ºC)
Sift flour and bicarbonate of soda in a bowl.
Position the butterfly whisk in the mixing bowl and add wet ingredients (eggs, maple syrup, coconut milk, vanilla extract and melted coconut oil) 10 seconds speed 2.
Add dry ingredients untill you reach a nice and fluffy consistency 15 to 20 seconds speed 3.
Add the blueberries 10 seconds // speeed 1.
If neccessary use the spatula to finish incorporating them.
Spoon the mixture into a lightly greased muffin tray.
These muffins will not rise, so fill each mould to the top.
Bake for about 25 minutes or until golden brown and cooked inside.
Cool on a cooling rack. Once cooled sprinke with icing sugar if desired.
They can be enjoyed at room temperature or, even better, slighty warm.
Gluten Free Blueberry Muffins
-Honey can be used instead of maple syrup for a sweeter taste.
-Substitute Almond milk for coconut milk if you prefer.
-For an ever helthier option, use 3/4 cup coconut flour and 1/4 pea protein powder
