Chocolate cake

  • 150 g dark chocolate
  • 100 g milk chocolate
  • 150 g butter, unsalted
  • 75 g plain flour
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract, natural
  • 100 g raw sugar
  • 1 pinches salt, fine
  • 4 --- egg
  • 1 tsp instant coffee

Poached pears

  • 3 --- pears, quartered and peeled
  • 1 tsp vanilla extract, natural
  • 1 tbsp honey, liquid

Whipped ganache

  • 300 g double cream
  • 180 g dark chocolate
  • 120 g milk chocolate
  • 1 tsp vanilla extract, natural
  • 1 tsp instant coffee

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Poached pears
  1. Quarter, core and peel 3 pears. Place in the simmering basket.
    Add the vanilla and honey to the bowl. Add the basket and cover the pears with water.
    Simmer 5 min/100C/speed 1.
    Take the basket out, place on a plate and reserve.
  2. Chocolate cake
  3. Place the dark chocolate and milk chocolate in the bowl. Grate 5 sec/speed 7.
  4. Add butter. Melt 4 min/60C/speed 2.
  5. Add flour, baking powder, vanilla, coffee, sugar, salt, egg.
    Mix 15 sec/speed 5.
  6. Place the pears in a round cake pan.
    Gently drop the chocolate batter on top.
    Bake at 200C for 38 minutes or until a toothpick comes out clean.
    Once baked, let the cake cool completely in the cake pan before turning out on a plate.
  7. Whipped chocolate ganache
  8. Place the two chocolates in the bowl and grate 10 sec/speed 8.
  9. Add the double cream, vanilla and coffee.
    Melt 2 min/50C/speed 3.
  10. Allow to cool completely before inserting the whisk and whipping 1 min/speed 3.
    Generously dollop the whipped ganache onto the turned out cake.

Tip

To clean the bowl in between the different steps, I just fill it halfway with warm water and do a quick clean : 10 sec/speed 8 then another 10 sec/reverse speed 8 and a last 10 sec/speed 8.
