- 30 grams olive oil
- 215 grams water
- 5 grams milk
- 1 level teaspoon sugar
- 20 grams fresh yeast or 2 tsp dried yeast
- 350 grams strong white flour
- 50 grams semolina
- 1 level teaspoons salt
- 3 mozzarella balls (gr. 125 each) cut into chunks, don't use buffalo mozzarella as it is too wet
- 250 grams passata

- Place water, milk, yeast and sugar into mixing bowl

Add flour, semolina, oil and salt. Knead for 2 minutes
Transfer to a glass bowl and cover with cling film and let the dough rise until doubled in size
- Preheat the oven to 230 C
Sprinkle the 3 baking trays with some flour
Divide the dough into 3 pieces and roll them out
Transfer them to the 3 baking trays
Divide the passata and spread it witht the help of the back of a spoon
Divide the chopped mozzarella and put on the 3 pizza bases
Sprinkle some oregano
Bake for 15 minutes (or more if necessary)
- if you like to add some other ingredients you can add olives or anchovies.
Basil is also a nice alternative to oregano
use pizza baking trays with holes for crispy base
