Olive and feta pinwheels

  • 45 grams black olives
  • 30 grams Pinenuts
  • 1 sheet defrosted puff pastry

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    olive and feta pinwheels
  1. Instructions
    1. Preheat oven to 200 degrees celcius.

    2.Line a baking tray with baking paper and set aside.

    3.Place the parmesan cheese into the TM bowl. Grate on Speed 8 for 10 seconds.

    4.Set aside in a separate bowl.

    5.Add the olives, feta and pine nuts to the TM bowl.

    6.Mix on Speed 5 for 10 seconds then scrape down the sides of the bowl.

    7.Repeat until well combined (the pine nuts don't need to be fully chopped)

    8.Spread the olive mixture evenly over the defrosted puff pastry sheet.

    9.Cut into 2 cm thick slices and lay cut side up on the prepared baking tray.

    10.Lightly brush with milk and sprinkle over seeds.

    11.Bake for 10-15 minutes or until lightly golden and crispy.

    12.Serve hot or cold.

Tip

Add Pesto or sundried tomato for a different flavour.

    So did them with 80gr of feta cheese as anything less wouldn't give me enough spread for the pastry. Not quite like in the original picture. Let's see how they taste...

    Also want to know about feta, and in the picture it looks rolled up and then cut. However, you only say to spread the mix over he pastry and then cut. Do you roll or not???
